Spring time delicacy: whole spinach with Shiitake

Spinach is called ‘red root vegetable’ 红根菠菜’ in Chinese. In east Asia, whole spinaches are usually slightly cooked as hot dish or in soup. Cold dish is also popular, with whole spinaches boiled and seasoned with variety of sauces and spices.

Ingredients (1 portion)

200g young whole spinach,

7 Shiitake mushrooms,

2 cloves of garlic,

1 spoon soya sauce

2 spoons cooking oil

1/2 tea spoon sesame oil

1 tea spoon sesame

salt and pepper

Method

1 Cut the garlic into pieces. wash the spinaches with water , leave them in whole and don’t need to cut the spinaches if they are not to large for the pan.

2 Heat 2 spoons of cooking oil in a pan and add the garlic.

3 Put the shiitake mushrooms up-side-down in the pan and fry with low- middle heat for 2 minutes untill they turned soft.

4 Add 1 spoon of soya sauce in the pan and the whole spinaches.

5 Stir till the spinaches turn soft and season with salt, pepper, sesame oil and sesame.

6 Serve with rice.

Tips

Spinaches shrink a lot when cooked. The best timing for seasoning is at the end. Otherwise it is often over salted. Don’t over cook the spinaches.
